We went catching today. My vendor invited 12 of us to go to Lake Texoma. At first, I thought “been there /done that.”  What an experience! These guys use artificial lures instead of live bait. 4 boats with the best guides that really know their stuff. We were casting, the fish pulled so hard my arms are sore. The Legend of Smokey Whiskers: From the Red River Trail to Striper Express

They say that Smokey Whiskers wasn’t always a cook and cowpoke from decades gone by. Some say that he is a folklore legend. In the days when Texas was wild and free, and cattle roamed the plains like thunderclouds, there was a cowboy named Smokey Whiskery. His beard was as gray as a prairie storm, and his eyes held the wisdom of the open range. He was no ordinary man. Smokey was a trail cowboy, a companion to the cowboys who drove the herds south to greener pastures.

They say he was born under a wagon, the day a dust storm kicked up so fierce it felt like the end of the world. The cowhands, hardened by the life, found his grub to be as delicious as they ever remembered . He was a cowpokes best friend They named him Smokey for the storm and the fact that he always had a fire going to cook tender vittles for the crew, and so the legend began.

Smokey wasn’t just a trail boss. He was a protector. He’d scare off coyotes and rattlesnakes, and his keen senses would alert the cowboys to weather changes and potential dangers. He was as tough as the land, as loyal as a good cattleman should be. When the cattle drives ended, Smokey found himself in Texas, his spirit as wild as the state itself.

Generations later, Smokey’s descendants were still in Texas, but their lives had changed. They’d traded the open range for the banks of Lake Texoma. One of these descendants, a sleek, intelligent woman nicknamed, “MT” found her calling in the kitchen; just as her great, great, great grandfather had and decades past

He was a natural-born chef, with a palate as discerning as a wine connoisseur. He could turn a simple fish into a feast that would make a hungry cowboy weep with joy.

MT’s culinary prowess caught the eye of a local fishing guide, a man named Bill Carey who ran Striper Express Guide Service. Bill was known for his knowledge of the lake, but his cooking skills were, shall we say, limited. M.T. saw an opportunity. She offered his services, and soon, the legendary Smokey Whiskers Catering for Striper Express was born.
